Fries & Ketsap
The sculptural assemblage, Fries & Ketsap, uses homemade ketsap—Filipino ketchup comprised of mashed banana, sugar, vinegar, and spice—to present viewers with the unique sensory experience of this traditional Filipino condiment. Celebrating the Filipino invention that resulted from a tomato shortage during World War II, the work immerses participants in a live experience of the distinct spicy, vinegary, and sweet blend that makes up banana ketchup. The work brings attention to the ways culinary appropriation intersects with the legacies of colonialism and war.
